Sayaka no Mukashi

A smooth, rich, and sweet usucha with just enough bitterness to make it an excellent introduction to matcha.

Assam Black Tea

Flavor

This usucha is floral and sweet with noticeable astringency and bitterness. It has a well-rounded flavor profile with a pleasant amount of umami, making it an excellent representation of what matcha, in general, tastes like. For that reason, I think it is one of the best entry points into the world of matcha.

My Thoughts

When I first got into matcha, this was my favorite. As my palate has developed, however, I have found this tea to leave a bit to be desired. Compared to Ippodo's higher-grade matchas, it is somewhat lower in quality and has a more generic flavor profile.

I think of it as the "default" usucha. It is approachable, forgiving, and versatile. It is also low enough in grade that it makes an excellent latte, alongside Horai, and is probably one of Ippodo's best choices for that purpose.

That said, it makes a poor koicha, where its shortcomings become much more noticeable.

Overall, this is a fantastic introduction to matcha. While it may not offer the depth and complexity of higher-end teas, it remains an excellent everyday usucha and one that I would confidently recommend to anyone just beginning their journey into Japanese tea.
