History
Ungetsu no Shiro is a matcha blend produced by Ozawa Seifūen in Uji, Kyoto. It is the favored tea of Zabōsai, the 16th-generation Grand Master of the Urasenke school of Japanese tea ceremony. Urasenke is the largest school of Japanese tea and is known for its emphasis on using untreated bamboo chasen and preparing matcha with a generous layer of fine foam.
Flavor
This usucha is floral, sweet, and umami-forward with subtle nutty notes and very little astringency or bitterness. It also produces an exceptionally rich, stable foam.
My Thoughts
As someone who prefers usucha over koicha and the Urasenke style of tea ceremony over the other major schools, this is my favorite matcha. It is by far my favorite tea for usucha, although it also makes a respectable latte (even if lower-grade matcha is usually better suited for that purpose) and a decent koicha.
If you ever want to experience what high-quality matcha can truly taste like, I highly recommend trying this tea. It is expensive, but I think it serves as a gateway into a world of exceptional matcha that has been cultivated and refined for generations.
